Convection ovens

The convection oven uses air circulation to control the heat being generated with the use of gas or liquid, it also uses fans to to force air movement throughout the chamber. Therefore the hot air is being pushed around the food and ensures the food is cooked evenly on all sides.

Convection ovens rely more on radiating heat for cooking rather than circumventing the air around the object,by moving hot air past the food they can operate at a lower temperature than a conventional oven, therefore can cook faster and more efficiently than a conventional oven.

Another form of a convection oven is the commercial impingement, this type of oven is often used to cook pizzas in restaurants.
